Shuho Shuzojo Brewery is founded in 1890,
located in the heart of Yamagata Prefecture,
north of Honshu, a mountainous region
with cold and very snowy in winters,
ideal conditions for sake production.
The area is also known as "Ginjo Okoku",
the Ginjo Empire, because the variety of Ginjo sakes produced here is far superior in Japan.
This family brewery produces almost exclusively Ginjo class sake,
with an average of 46% semibuaï in all its vintages,
an exceptionally high figure. The brewery is very much focused on
respecting traditional techniques and product quality.

Tasting Notes
A super dry Junmai Daiginjo, fruity aromas on the nose, punctuated by fine notes of citrus zest. These elegant characteristics classically associated with the category of Daiginjo, strong flavor that spreads across your tongue and leaves a sharp aftertaste are generally accompanied by a marked sweetness. One of the hallmarks of Shuho's dry sake.
Yukimegami rice from Yamagata Prefecture.
